Three sauces to serve with your French fries

After showing you how to prepare our French fries three ways, the Fleischmann's Cooking Group team now suggests three sauces with very different flavour profiles to serve with them: a creamy, aromatic chive mayonnaise, a tartare sauce with pickles and a bravas sauce with a touch of heat.

Three simple preparations in which we use the XM hand blender to achieve the right texture for each sauce.

Chive mayonnaise

Ingredients

  • 55 g egg
  • 2 g salt
  • 10 g apple cider vinegar
  • 100 g mild olive oil
  • 100 g chive oil

Preparation

1. Place the egg in a jug. Add the apple cider vinegar and salt.

2. Blend with the XM hand blender at a moderate speed.

3. Gradually add the mild olive oil and chive oil in a thin stream, continuing to blend with the XM hand blender.

4. Continue until you achieve a smooth, emulsified mayonnaise.

5. Set aside until ready to serve.

Make the most of the XM hand blender’s variable speed to control the emulsion and achieve the right consistency for the mayonnaise.

  • 200 g mayonnaise
  • 25 g gherkins
  • 30 g capers
  • 15 g parsley

Preparation

1. Place the shallot, Dijon mustard, boiled egg, mayonnaise, gherkins, capers and parsley in a jug.

2. Blend all the ingredients with the XM hand blender until smooth.

3. Set aside until ready to serve.

Bravas sauce

Ingredients

  • 320 g peeled tomato
  • 110 g peeled onion
  • 10 g rehydrated chile de árbol
  • 6 g sweet paprika
  • 250 g chicken stock
  • 12 g wine vinegar
  • 7 g sugar
  • 40 g olive oil
  • 15 g salt
  • 8 g black pepper

Preparation

1. Heat the olive oil in a saucepan. Sauté the onion until soft.

2. Add the wine vinegar and peeled tomato.

3. Add the chile de árbol, sweet paprika, chicken stock, sugar, salt and black pepper. Cook all the ingredients together for 30 minutes.

4. Taste the sauce and adjust the seasoning if necessary.

5. Transfer the preparation to a jug. Blend with the XM hand blender until you achieve a fine, smooth and silky texture.

6. Set aside until ready to serve.

The tempered-steel Y-BLADE helps you achieve a fine, silky bravas sauce.

Three sauces, different combinations

Chive mayonnaise, tartare sauce and bravas sauce are three options to serve with the potatoes in this recipe. Try pairing them with the three cuts —French fries, sliced potatoes and straw potatoes— and discover your favourite combination.
