Hake in green sauce recipe with Emulsionizer PRO 1.0

In this first instalment, we show you how to prepare hake in green sauce — a delicious dish that’s sure to impress. Ingredients:
- 90 g garlic cloves (unpeeled)
- 185 g fresh parsley
- 30 ml olive oil
- 300 ml fish stock
- 140 g hake (in chunks)
- 50 g clams
Preparation:
1. Roast the unpeeled garlic cloves on a tray with a little oil and salt.
2. Set up the Emulsionizer PRO with the 0.5 mm disc.
3. Pour the fish stock into the bottom of the Emulsionizer jug.
4. Add the roasted garlic, parsley and olive oil.
5. Blend using the XM-12 hand blender until you achieve a green sauce with the desired texture.
6. Separately, cook the hake chunk and open the clams in a pan.
7. To plate, place the hake in the centre, top with the clams and surround with the green sauce.
