Relive the taste of our Christmas video: Apple Tart

Ingredients
- 1 puff pastry disc, 23 cm
- 450 g of Reinette apples
- 100 g TPT syrup
Filling:
- 350 g peeled Reinette apples
- 140 g brown sugar
- 60 g rum
- 4 g cinnamon
Preparation
Bake the puff pastry disc for 10 minutes at 180 °C, placing a weight on top to prevent excessive rising.
For the filling, place the peeled and sliced apple in a vacuum bag with the rum, sugar, and cinnamon. Seal at 99% using the vacuum packing machine.



Cook sous-vide in the SmartVide at 70 °C for one and a half hours.
Remove the cinnamon stick and blend the mixture in a jug using the XM-12 hand blender. Transfer the preparation into a piping bag.
Peel and core the remaining apples, slicing them finely with the veg prep machine.
Rellena el hojaldre con la crema de manzana y coloca de manera ordenada las láminas de manzana encima. Hornea la tartaleta otros 10 minutos a 180 °C.
Retira del horno y pinta con el almíbar para darle un acabado brillante.
