Standardise your recipes with the cutter programmes

Continuing with the theme of standardisation in the kitchen and after presenting the Force Control System of the Ultra vegetable preparation machines, we now want to talk about cutters Ultra cutters-emulsifiers. These machines, thanks to the brushless motor, come with a range of features and benefits that have facilitated and improved the work of the end user. However, among all these advantages, there is a unique feature designed specially to obtain process standardisation in the kitchen: programmes.

Ultra cutters-emulsifiers have three pre-set programmes whose parameters can be adjusted and that combine different speeds and times to always achieve the same result automatically. Specifically, users can choose between P1 for a dense texture (products such as bananas), P2 to obtain a smooth texture (products such as tomatoes) and P3 which is a pulse programme that creates a “chunky” texture. To use them, the operator simply needs to add all of the ingredients to the bowl, select the programme P1, P2 or P3 and leave the machine to do the work. 

In addition to the machine's three pre-set programmes, Sammic’s Ultra cutters-emulsifiers allow the operator to create up to 9 of their own programmes. As a result, the operator, depending on the product to be processed, can combine different steps, different speeds and different times to standardise their own recipes and always obtain the same result automatically. As Tomas Lizarazu, an engineer at Sammic, says “this brings two advantages because, on the one hand, you always get the best result and you also don’t have to watch the machine continually and can use that time to perform other tasks”.

Powdered condiments 3 steps
  • Step 1: 20 pulses.
  • Step 2: Speed 4 for 1:20 minutes
  • Step 3: 10 pulses.
Compotes, purees and fillings 3 steps
  • Step 1: Speed 10 for 2:00 minutes
  • Step 2: Pause to add ingredients.
  • Step 3: 10 pulses.
Tomate sauce, Chutney 3 steps
  • Step 1: Speed 10 for 3 minutes.
  • Step 2: Pause to add ingredients.
  • Step 3: 10 pulses.
Tartar sauce 1 step
  • Step 1: 30 pulses.
Traditional Gazpacho 3 steps
  • Step 1: Speed 5 for 3:20 minutes.
  • Step 2: Rest.
  • Step 3: Speed 3 for 3 minutes + add ingredients.
